Açai-Blackberry Chia Jam

This sweet, fruity jam is great as a spread on anything from homemade bread, crackers and one of my favourite breakfast sides, Spelt Oat Scones.  This healthy yet truly nourishing treat is loaded with raw superfoods to give you energy and vitality throughout the day.

 

Ingredients:

3 tablespoons chia seeds

1/2 cup fresh apple juice

1 cup organic blackberries (or berry of choice)

3 tablespoons açai berry powder

1 tablespoon fresh squeezed lemon juice

Pure maple syrup to taste

 

Directions:

Soak chia seeds in apple juice until the juice is absorbed and the mixture becomes gelatinous. Blend blackberries in a blender until smooth with a few chunks.  Add blended berries and all other ingredients to the chia seed mixture.  Mix well.  You can enjoy this jam right away or refrigerate to use later. It will keep fresh in a glass jar for up to one week.
