Almond Butter Cookies

Who can resist a big moist cookie? I certainly cannot. This particular recipe is finger likin’ good and super easy to make! Even the kids will love it. The almond butter flavor is great, but the really wonderful thing about these is the texture.  They're thick, soft, and chewy – just perfect!

Ingredients

1 cup natural almond butter (or natural peanut butter)

1/2 cup organic butter, softened (or coconut oil for vegans)

1/2 cup organic honey (or pure mape syrup)

1/2 cup packed unrefined brown sugar (raw cane sugar or Sucanat)

2 tablespoons blackstrap molasses (optional: for extra B-vitamins)

1 organic, free-range egg (omit for vegans)

½ teaspoon natural vanilla extract

1 1/4 cups organic spelt flour (or organic whole wheat flour)

1 teaspoon aluminum free baking powder

 

Directions

Preheat the oven to 350 degrees F (175 degrees C). In a large bowl, mix together the almond butter, butter, honey, brown sugar, molasses and egg and vanilla until smooth. Combine the spelt flour and baking powder; stir into the batter until blended. Roll into small balls, and place on a greased cookie sheet. Flatten slightly using a fork. Bake for 13 to 15 minutes in the preheated oven, or until cookies are golden brown at the edges.
