Creamy Tomato Soup from Scratch

This Creamy Tomato Soup from scratch is great for the entire family! Tomatoes are full of antioxidants. One of these antioxidants, being lycopene, has been linked to higher functionality with age, as well as an increase in your skins natural sun protection factor! Tomatoes have also been shown to prevent cancer, improve heart health and encourage healthy bones.
Ingredients:
Prep time: 5 mins | Cook time: 5 mins | Total time: 10 mins | Serves: 4-6
2 cloves garlic, peeled
1 medium onion, peeled and diced
2 cups of very ripe fresh tomatoes, diced
1 cup almond milk (or unsweetened coconut milk)
1 tbsp. fresh thyme (or 1 tsp. dried)
1 tbsp. celery seed (or handful fresh celery leaves)
1 tbsp. fresh basil (or 1 tsp. dried) + additional for garnishing (optional)
2 tbsps. extra virgin olive oil + plus additional for garnishing (optional)
Himalayan Salt (or Celtic sea salt) to taste
Black pepper to taste
Directions:
Place all ingredients in a blender. Blend until smooth. Heat up, garnish with a bit of olive oil and a basil leaf, serve with some homemade whole grain toasted bread and enjoy! My toddler loves this one :)
