Good-For-You Homemade Salsa
Nov 29, 2011While chips aren’t your ideal lunch, if you’re going to top them with a super healthy salsa, it takes away a little bit of the guilt, doesn’t it? ;) At least make it whole grain tortilla chips. Now, let's turn to the healthy aspect of salsa. With so much flavor, it's hard to believe that salsa is actually very healthy for you. This salsa adds an extra serving of antioxidant rich veggies, brain building essential fatty acids and immune boosting herbs and spices!
Ingredients:
3 large ripe tomatoes, diced
1 small onion, finely chopped
1 small green bell pepper, seeds and veins removed, and minced
1 jalapeno pepper, seeded
1-2 clove garlic, minced
1 tablespoon minced fresh cilantro
2 limes, juiced
1 tablespoon extra virgin olive oil
1 teaspoon ground cumin
1/2 teaspoon sea salt
1/2 teaspoon freshly ground black pepper
1/4 cayenne pepper or paprika (optional)
Other ingredients you may want to add:
- 1 small red onion, finely diced
- 1 cup cooked black beans
- 1 large avocado, peeled and diced
- 1 mango, peeled and diced
- 1/2 cup pineapple chunks
- 1/2 soaked pumpkin seeds
Directions:
Combine all ingredients, and any extra ingredients you may want to add, and stir well with a spoon. Optional: If you prefer your salsa “saucy”, combine all ingredients in a food processor, cover and pulse (process) until desired consistency is achieved. Pour in a large glass bowl, cover with plastic wrap and chill until serving time. Serve with whole grain tortilla chips.
