Smooth Chocolate Avocado Pudding

If you have a sweet tooth like mine, than this sweet, yet healthy dessert (or snack) is for YOU!  The rich buttery texture of the avocado, which is filled with “good fat”, makes this a wonderful blood sugar balancing treat since the fat acts to slow down the absorption of sugar into your blood stream.

 

Pure maple syrup, a natural sweetener filled with minerals, and the raw cacao, which is a rich source of magnesium, sulfur and antioxidants, make this pudding so nourishing and divinely tasty that it’s close to perfect!  Go ahead and enjoy it completely guilt free!

 

Ingredients:

1 large, ripe avocado

1/4 cup pure maple syrup (add more if you like yours sweeter)

2 tablespoons raw cacao powder

½ teaspoon natural vanilla extract

Organic vanilla almond milk as needed to blend (optional)

Optional: Add 1-2 tablespoons of tofu for a firmer and thicker pudding

 

Directions:

Slice the avocado through the middle so you have two halves.  Remove the big seed. Take a spoon and scoop out the avocado into your food processor (or blender).  Pour in the maple syrup, cacao and vanilla and blend.  Add the almond milk as needed.  Continue blending together until smooth.  Refrigerate your pudding for 30 minutes and serve fresh.  You can even freeze it for a cool and refreshing frozen pudding.  Enjoy!
