Superfood Granola

This nutrient packed granola is the perfect breakfast to start your day on.  Simply top it off with a bit of coconut or almond milk, and you have a completely nourishing and balanced breakfast.  You can even add some fresh fruit like banana or apple slices, fresh berries or mango.

 

Ingredients:

3 cups whole grain rolled oats (certified gluten-free)

1 cup dehydrated buckwheat sprouts or roasted buckwheat (can substitute 1 cup oats)

½ cup raw almonds

½ cup raw walnut pieces

½ cup raw sunflower seeds

¼ cup hempseeds

¼ cup chia seeds (or flaxseeds)

½ cup shredded fresh coconut

½ cup raw, unpasteurized honey (or maple syrup/cane syrup)

¼ cup virgin coconut oil

1 tsp natural vanilla extract

1 tsp unrefined sea salt

1 ½ cup dehydrated fruits of choice (blueberries, raisins, mangos, apricot, cranberries, goji berries – all organic and sulfite free)

 

Directions:

Preheat oven to 300F. Combine all wet ingredients in a small saucepan over low heat and warm until liquefied. In a large bowl, combine all dry ingredients, EXCEPT dehydrated fruit, and mix.

Pour wet ingredients over dry ingredients and mix well to evenly coat, and spread over a baking sheet.

Place in the oven and bake for 15 minutes, then stir and return to the oven for another 15 minutes or until crisp and lightly browned.

Remove from the oven and add dehydrated fruit. Allow to cool before storing in a large glass or stainless steel container for up to one month. Enjoy!

 

NOTE: Can also be made RAW by spreading granola on a parchment paper and placing in a dehydrator overnight. This method retains more of the nutrients!
